Notes: I do this as a tray bake instead of frying which is much less effort and works better in my opinion. Put butterbeans and tomatoes into a roasting dish and roast at about 180C until some butterbeans are crispy and the tomatoes are a blackened and juicy. Chuck the kale on top for a few minutes. I leave out garlic and just add walnuts and lemon when out the oven. I've added gnocchi to this instead of having with bread and it's nice.

To make this cheaper and quicker I use 1 x tinned tomatoes and 1 x tinned green lentils, and skip the 200ml water in the second paragraph of this recipe. Cook with lid off until it's reduced and the tomatoes aren't watery (10 mins ish) then continue with the recipe as normal.

Notes: Great meal prep packed lunch! I don't like the dressing they suggest but Eri does. I make a soy one for me -- approx 3tsbp soy sauce, 1/2 tsp ginger, 1tsp white wine vinegar/rice vinegar, 2tbsp sesame oil, 1/2 tsp honey. Taste and adjust as needed. Yum yum.

Notes: I use tinned tomatoes and tinned green lentils to keep it cheap, and a splash of white wine vinegar instead of white wine so it has no alcohol in it. I use oatly oatgurt instead of real yog.

The recipe is with paneer but I use tofu for lactose reasons, and instead of yogurt and cream I use coconut milk. Because of the lower fat content the first bake isn't as significant but obv cooks the garlic which is important. I sometimes just do this all on the hob (fry garlic and ginger first, add spices, add tofu, add everything else)

So easy! I added tofu for protein and it was really good. I think you could chuck any veg in this soup base really and it'd be nice. 15 min meal.

Miso bay and butterbean brothy pasta (to make this for two just fry an onion, it's nice to add leek, add stock, a bit of miso, a bay leaf, and a tin of butter beans. Cook while making your pasta. Season and add a spoon of butter then stir in your pasta. Peas are nice in this if you are so inclined (Eri is not))
Coconut soup (to make this fry some spring onions and ginger and chilli, add turmeric and ground pepper, add quorn pieces or some type of protein (tofu or white beans works too). Add 1 tin coconut milk and stock and a bit of soy sauce. Cook noodles. Good with fresh coriander, basil and/or lime.
